Here's a quick, easy, healthy and delicious way to bake a whole head of cauliflower in the oven! You'll need:
1 head cauliflower
1 ½ cup low fat plain Greek yogurt
1 tsp lime juice
2 tsp sea salt
1 tsp black pepper
½ tsp cayenne pepper
1 tsp garlic
2 Tbsp chili powder
1 Tbsp cumin
1 tsp curry powder
1. Preheat over to 400º
2. Trim greens and stem off cauliflower
3. Mix ingredients in large bowl
4. Roll cauliflower around in mix to completely cover the florets. Leftover mix can be saved for later use on meat or vegetables.
5. Bake on oiled baking sheet for about 40 minutes, or until mix on the outside of the cauliflower is browned.
We decided to sprinkle a little parmesan cheese on top after the cauliflower was done and set it in the over for another 5 minutes after it was off.
